We attach great importance to the regionality and quality of our raw materials, which come from Austria as far as possible and in most cases from our own district. In 1995, Michael Regner began to refine his great-grandfather’s old recipes – with success – because today Seckau gingerbread is known far beyond Austria’s borders.

Gingerbread recipe

HONEY GINGERBREAD DOUGH FOR HOME WITH EXTRA HONEY

350 g rye flour T 960
850 g honey
100 g whipped cream
70 g butter
350 g wheat flour T 700
22 g gingerbread spice
11 g cinnamon
15 g baking soda
150 g grated hazelnuts/almonds
50 g candied orange peel
50 g candied lemon peel
(alternatively use more hazelnuts/almonds instead of candied orange peel and candied lemon peel)
2 large eggs (or 3 smaller ones)

Preparation:

Weigh the rye flour into a bowl, bring the honey, whipped cream and butter to the boil and mix with the rye flour. Mix the wheat flour with the spices and baking soda, add the remaining ingredients and knead a little. Finally, knead in the honey-flour mixture. Cover and leave to rest for a day. Roll out, cut out as desired and place on the baking tray lined with baking paper. Brush with a little egg and top with almonds and cherries as desired. Now bake in a preheated oven at approx. 200°C. It is important to pay attention to the baking time, which can vary from oven to oven. Approx. 8 – 12 minutes. The gingerbread can also be dipped in chocolate or decorated with icing as desired.
